LEGENDS ATTRACTIONS

Global Attractions is the newest business vertical and is quickly expanding. Starting with One World Observatory sitting high above Manhattan at the top of the tallest building in the Western hemisphere and now expanding all over the world, the Attractions vertical brings together all of Legends 360-degree capabilities to develop unparalleled experience in one awe-inspiring space, featuring some of the most spectacular views and newest technology around the world. For each location, we operate the tour experience, ticket sales, hospitality offerings, special events, and sponsorship – all to elevate the guest experience at the top. Some of the venues include One World Observatory in NYC, he View at the Shard in London, Sky View Observatory in Seattle, Skyrise Miami, and more.


ILLUMINARIUM EXPERIENCES

The latest addition to our Global Attractions portfolio, Legends has been chosen as the exclusive operator of llluminarium Experiences: cutting edge immersive, experiential entertainment spectacles. Located in major cities and tourism destinations around the world, these custom-designed venues, or “Illuminariums,” will surround visitors in a 360×360 sensory experience, using advanced laser projection mapping and sound systems to transport guests to places they may never otherwise visit: the world’s best safari, an expedition to Mars, or even a trip back in time to visit ancient civilizations. After hours, Illuminariums will transform into unique spaces for corporate and private events, as well as immersive club/bar experiences on the weekends. As museums are to art, cinemas are to movies, Illuminariums are to experiential entertainment. Not only an Attraction, Illuminarium Atlanta is a unique destination for events; theaters are complemented by a Café and Patio with combined seating for over 140 guests, serving content inspired food and beverage offerings.


THE ROLE

The Executive Chef/Director of Food & Beverage is responsible for managing/overseeing the complete Hospitality/Food & Beverage offerings at Illuminarium Atlanta. This includes front of house operations, nighttime bar operations, events, production, menu management, food production and sanitation aspects of all culinary and stewarding operations throughout the Facility. Specific responsibilities include but are not limited to:


ESSENTIAL FUNCTIONS

  • People and product focused management of day-to-day operations of the Café and Patio
  • Implements and enforces all departmental and organizational policies and procedures. Ensures associate compliance with relevant Company standards, policies and procedures.
  • Recruits and successfully onboards Culinary and Food and Beverage supervisory team; administers feedback and corrective counseling, training and development, performance appraisals, and payroll accountability.
  • Coordinates scheduling of Culinary and Food and Beverage associates to ensure adequate staffing levels in accordance with forecasted budget; analyze menu and food costs and the preparation of cost and quality efficient menus/specials; prepares reports regarding food and menu analysis.
  • Plans innovative menus, driving culinary innovation to align with show content in the Attraction, maintaining financial responsibility for the menu mix
  • Oversees and manages bar operations, continuously reviewing, adjusting and evolving the bar experience and menu
  • Manages short and long term planning, establishing priorities and assigning production and preparation tasks for the Culinary team to execute
  • Prepares cost saving annual budgets and ensures all fiscal responsibilities are met
  • Oversees inventory management to assure adequate supplies and performs periodic inventory
  • Oversees and executes requisitioning and purchasing. Maintains effective vendor relationships.
  • Oversees and is responsible for the sanitation standards of all restaurant, kitchen, Patio and Food and Beverage related FOH/BOH spaces, to assure compliance with local health department standards and company standards
  • Ensures that financial (invoices, reporting) and HR/Payroll related administrative duties are completed accurately, on time and in accordance with company policies and procedures
  • Ability to plan and execute multiple banquet functions, coordinate with Event sales team and Events coordinator on execution and supports engagement of external parties for larger events
  • Acts as Manager on Duty, alternating with the Operations manager and other senior leadership
  • Directs interaction with high level clients, investors and Illuminarium ownership
  • Coordinates and works in conjunction with Legends Hospitality management to implement and conduct training and development
  • Performs other assignments/functions as required


QUALIFICATIONS

To perform this job successfully, the candidate must be able to perform each essential duty above at the highest levels. The requirements listed below are representative of the knowledge, skill, and/or ability required.

  • The ideal team member will have a degree or certification from an accredited culinary arts institute, or apprenticeship certification from the American Culinary Federation.
  • Three (3) to five (5) years of experience as an Executive Sous Chef in a high-volume banquet kitchen.
  • Proven track record in improving kitchen efficiencies, quality, food and labor costs
  • Must have excellent managerial, financial analysis, team building and communication skills/customer service.
  • Must have knowledge of kitchen sanitation, operation and maintenance of kitchen equipment.
  • Must be detail oriented and extremely organized with the ability to learn new programs and procedures quickly.
  • Must be familiar with inventory systems, report generation, proficient with Microsoft Office Suite.
  • Must be flexible to work extended hours due to business requirements including nights, weekends and holidays.
  • Must be open to providing incidental or short-term support and/or travel to other Illuminarium locations
  • Practice safe work habits, follow all safety policies and procedures and regulations including but not limited to Legends’ COVID Preparedness Plan and Standard Operating Procedures, complete company-wide safety training and any additional job specific safety training.
  • Follow and encourage your team to follow all safety policies and procedures, looking for and reporting any unsafe work conditions, and complete company-wide safety training and any additional job specific safety training.
  • Report all safety incidents (injuries and illnesses) into the company’s risk management system (Origami Risk) on the same day that the safety incident has been reported to you.
